Ingredients

2 cans (15 oz each) of chickpeas, drained and rinsed

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Juice of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

2 tablespoons olive oil (optional for drizzling)

Instructions

Prepare the Chickpeas: In a medium saucepan, combine the drained and rinsed chickpeas with enough water to fully submerge them. Bring the water to a boil over medium heat. Once boiling, reduce the heat to a simmer and cook the chickpeas for about 5 minutes. This step softens the chickpeas and enhances their flavor profile.

Sauté the Garlic: While the chickpeas are simmering, melt the unsalted butter in a separate skillet over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes, stirring frequently, until the garlic is fragrant and lightly golden. Take care not to let the garlic burn, as it can turn bitter.

Mash the Chickpeas: After the chickpeas have simmered, drain them and return them to the saucepan. Add the sautéed garlic and butter mixture, smoked paprika, ground cumin, lemon juice, and a pinch of salt and pepper. Using a potato masher or fork, mash the chickpeas to your preferred consistency; you can leave it slightly chunky for texture or mash until smooth, depending on your taste.

Adjust Seasoning: Give the chickpea mash a taste and adjust the seasoning if needed. Add more salt, pepper, or lemon juice as per your preference to achieve the ideal flavor balance.

Serve: Spoon the mash into a serving bowl. If desired, drizzle with olive oil for added richness and garnish with freshly chopped parsley. This delightful mash can be enjoyed warm and pairs perfectly with pita bread, crackers, or as a spread on sandwiches.
