1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

1 lemon, juiced and zested

Fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese, for serving

Prepare the Ingredients: Start by washing the baby potatoes thoroughly and cutting them in half. Next, take the boneless chicken thighs and cut them into bite-sized pieces. Season the chicken pieces evenly with salt, pepper, smoked paprika, dried thyme, and dried oregano. Set aside.

    Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the halved baby potatoes to the skillet. Cook for about 10-12 minutes, turning occasionally, until the potatoes are golden brown and tender when pierced with a fork. Once cooked, remove the potatoes from the skillet and set them aside on a plate.

      Sear the Chicken: In the same skillet used for the potatoes, reduce the heat to medium-high and add 2 tablespoons of unsalted butter. Once the butter has melted and is sizzling, add the seasoned chicken pieces. Cook the chicken for about 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through.
