4 slices of whole-grain or sourdough bread

1 cup fresh baby spinach leaves

½ cup fresh basil leaves

¼ cup pine nuts (toasted)

2 garlic cloves, minced

½ cup grated Parmesan cheese

½ cup extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1 medium ripe tomato, sliced

1 medium cucumber, thinly sliced

½ ripe avocado, sliced

Optional: A handful of arugula for an extra peppery crunch

Instructions
 

Make the Pesto: In a food processor, combine the fresh baby spinach leaves, basil leaves, toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse the mixture until it's finely chopped and well blended.

    Add Olive Oil: While the food processor is still running, slowly pour in the extra virgin olive oil until the pesto reaches a smooth and creamy consistency. Occasionally stop to scrape down the sides, and then season with salt and freshly cracked black pepper to taste.

      Prepare the Bread: Toast the slices of bread in a toaster or on a skillet until they are golden brown. This step adds a delightful crunch and enhances the overall flavor of the sandwich.

        Assemble the Sandwiches: Take two slices of the toasted bread and generously spread a layer of the homemade pesto on each.
