Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 large egg

1 cup milk (or non-dairy milk)

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup mixed fresh fruits (strawberries, blueberries, diced pineapple)

1/2 cup cream cheese, softened

2 tablespoons maple syrup (optional)

1/4 cup powdered sugar (for topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Using a whisk, mix thoroughly until all the dry ingredients are well incorporated and there are no lumps.

Prepare Wet Ingredients: In a separate bowl, crack the large egg and whisk it until fully beaten. Add the milk (or non-dairy alternative), melted unsalted butter, and vanilla extract. Whisk these wet ingredients together until the mixture is smooth and uniform.

Combine Mixtures: Carefully pour the wet mixture into the bowl containing the dry ingredients. Using a spatula, gently fold the two mixtures together. Mix only until just combined—it's okay to have a few lumps, as overmixing can result in dense muffins.

Add Fruits: Gently fold in the mixed fresh fruits (strawberries, blueberries, and diced pineapple) into the batter. Ensure that the fruits are evenly distributed without breaking them apart.

Fill Muffin Tin: Using a spoon or an ice cream scoop, evenly fill each muffin cup in the prepared muffin tin, filling them about two-thirds full. This allows room for the muffins to rise as they bake.

Cream Cheese Topping: In a small bowl, combine the softened cream cheese with the optional maple syrup (if using). Mix until smooth. Spoon a dollop of this creamy mixture onto the center of each muffin, then use a toothpick to gently swirl it into the batter for a beautiful marbled effect.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean when they are done.

Cool & Serve: Allow the muffins to cool in the tin for approximately 5 minutes. Carefully transfer them to a wire rack to cool completely. Before serving, dust the tops with powdered sugar for an extra touch of sweetness and visual appeal.
