Frozen Yogurt Raspberry Lemon Swirl Rings

2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for topping)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup granola (optional, for topping)

Instructions
 

Prepare the Raspberry Sauce: In a small saucepan over medium heat, combine fresh raspberries and 2 tablespoons of honey (or maple syrup). Gently stir as the raspberries cook, allowing them to break down and release their juices, which should take about 5-7 minutes. Once thickened slightly, remove the saucepan from heat and set aside to cool.

    Mix the Yogurt Filling: In a large mixing bowl, combine the Greek yogurt, the remaining honey (or maple syrup), fresh lemon juice, lemon zest, vanilla extract, and salt. Stir vigorously until the mixture is completely smooth and well blended.

      Layer and Swirl: With the raspberry sauce cooled, take a silicone ring mold and fill each ring with a layer of the yogurt mixture, filling them about halfway. Next, drizzle a spoonful of the raspberry sauce on top of the yogurt. Using a toothpick or skewer, gently swirl the raspberry sauce into the yogurt, being careful not to fully combine the two.

        Freeze Until Firm: Repeat the layering process until all ingredients are used and the molds are filled to the top. Tap the filled molds gently on the countertop to settle the mixture and release any trapped air bubbles. Place the molds into the freezer and freeze for at least 4-6 hours, or until they are completely solid.

          Remove from Molds and Serve: Once fully frozen, remove the molds from the freezer. To easily release the yogurt rings, run warm water over the outside of the molds for a few seconds. Carefully pull each ring out of the mold and transfer them onto a serving plate.
