Mix Ingredients: In a large mixing bowl, add the rolled oats, oat milk, almond flour, coconut sugar, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Mix well with a spatula or wooden spoon until all ingredients are fully combined and the mixture appears smooth. Allow the mixture to rest for about 10 minutes, giving the oats time to absorb some of the liquid, which will help the cookies hold their shape.
