Ingredients

2 large ripe bananas

1 cup plain or flavored Greek yogurt (vanilla or strawberry are excellent choices)

1 cup dark chocolate chips (or dairy-free chips for a vegan-friendly option)

1 tablespoon coconut oil (helps achieve a smooth melt)

1 teaspoon vanilla extract (optional, for additional flavor)

1/4 cup chopped nuts (such as almonds, walnuts, or peanuts)

1/4 cup unsweetened shredded coconut

Popsicle sticks

Instructions

Prep the Bananas: Start by peeling the bananas and slicing them in half lengthwise. Carefully insert a popsicle stick into the cut end of each banana half, ensuring it is stable and secure.

Make Yogurt Coating: In a medium-sized mixing bowl, combine the Greek yogurt with the vanilla extract, if using. This step will elevate the flavor of your yogurt, making each bite delightful.

Dip the Bananas: Take each banana half and immerse it into the yogurt mixture, making sure each piece is thoroughly coated. Use a spoon to assist in spreading the yogurt evenly if necessary. Once coated, place the bananas on a baking sheet lined with parchment paper.

Freeze the Pops: Once you've coated all the bananas, transfer the baking sheet to the freezer and allow them to chill for about 1 to 2 hours, or until the yogurt has firmed up nicely.

Melt the Chocolate: In a microwave-safe bowl, mix the dark chocolate chips with the coconut oil. Microwave the mixture in 30-second increments, stirring thoroughly between each interval, until the chocolate is completely melted and smooth in texture.

Coat with Chocolate: Retrieve the yogurt-coated bananas from the freezer. Dip each one quickly into the melted chocolate, making sure to allow any excess chocolate to drip back into the bowl.

Add Toppings: While the chocolate is still wet, generously sprinkle the chopped nuts and shredded coconut over the chocolate-covered bananas. This will add a delightful crunch and additional flavor to your pops!

Final Freeze: Return the chocolate-dipped bananas to the parchment-lined baking sheet and place them back in the freezer for an additional 30 minutes to 1 hour to allow the chocolate to set completely.

Serve and Enjoy: Once the chocolate has hardened, remove the Frozen Yogurt Fudge Banana Pops from the freezer. Enjoy these delicious and healthy treats as a perfect snack or dessert!
