2 cups plain Greek yogurt

1 cup full-fat coconut milk (for extra creaminess)

1/2 cup honey or maple syrup (adjust for desired sweetness)

1/2 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if preferred)

1 tablespoon coconut oil (for melting chocolate)

Pinch of sea salt

Instructions
 

Create the Yogurt Base: In a large mixing bowl, whisk together the Greek yogurt, coconut milk, honey (or maple syrup), shredded coconut, and vanilla extract. Mix until the mixture achieves a smooth and creamy consistency.

    Fill the Molds: Carefully pour the yogurt mixture into silicone popsicle molds, filling each one about three-quarters full. Be sure to leave a little space at the top of each mold to allow for the mixture to expand as it freezes.

      Freeze the Yogurt Base: Insert popsicle sticks into the center of each mold. Place the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until the pops are completely solid.

        Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring well between each interval, until it is smooth and fully melted. Once melted, let it cool for a few minutes.

          Dip the Pops: Once the yogurt pops are fully frozen, gently remove them from the molds. You can do this by running warm water over the outside of the molds for several seconds. Dip each pop into the melted chocolate, letting any excess chocolate drip off back into the bowl.
