Ingredients

1 cup plain or vanilla Greek yogurt

1 cup cream cheese, softened to room temperature

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen, such as blueberries, raspberries, and strawberries)

1 cup all-purpose flour

½ cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 large eggs

½ cup milk

⅓ cup vegetable oil

1 teaspoon lemon zest

Optional: additional mixed berries and whipped cream for topping

Instructions

Preheat the Oven: Set your oven temperature to 350°F (175°C). Prepare a donut pan by lightly greasing it with non-stick cooking spray or a drizzle of oil.

Create the Yogurt Berry Cheesecake Filling: In a medium mixing bowl, blend the Greek yogurt, softened cream cheese, powdered sugar, and vanilla extract using a hand mixer or whisk until the mixture is smooth and creamy. Carefully fold in the mixed berries, and then set the mixture aside.

Prepare the Donut Batter: In a large mixing bowl, thoroughly whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined. In another bowl, beat the two eggs, then add the milk, vegetable oil, and lemon zest, mixing until fully incorporated.

Combine the Mixtures: Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently until everything is just combined. It’s okay if the batter is slightly lumpy; avoid overmixing to keep the donuts tender.

Fill the Donut Pan: Using a piping bag or a spoon, fill each cavity of the prepared donut pan halfway with the donut batter. Place about one tablespoon of the yogurt berry cheesecake filling in the center of each donut, then cover with the remaining donut batter until the cavities are full.

Bake the Donuts: Transfer the pan to the preheated oven and bake for about 10-12 minutes, or until the donuts appear golden brown and a toothpick inserted into the center comes out clean. Let them cool in the pan for approximately 5 minutes before carefully transferring them to a wire rack to cool completely.

Freeze for Dessert: Once the donuts are completely cooled, arrange them on a plate and place them in the freezer for at least 1 hour to allow the cheesecake filling to firm up.

Serve and Enjoy: When ready to enjoy, optionally top each donut with additional fresh berries and a dollop of whipped cream for extra indulgence. Delight in your refreshing and scrumptious Frozen Yogurt Berry Cheesecake Donuts!
