1 tablespoon unsalted butter

Instructions
 

Make the Apple Filling:

        - Sauté the mixture for about 5-7 minutes, stirring occasionally, until the apples become tender and caramelized.

            Prepare the Yogurt Mixture:

              - In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon.

                  Assemble the Sandwiches:

                    - Take one cookie and generously spread a portion of the yogurt mixture on the bottom side.
