Ingredients

2 cups Greek yogurt (plain or vanilla preferred)

1/2 cup almond milk (unsweetened)

1/3 cup honey or maple syrup (adjust based on your sweetness preference)

1/2 teaspoon pure vanilla extract

1/4 cup almond butter (smooth or crunchy)

1/4 cup sliced almonds (toasted for extra flavor, if desired)

2 tablespoons poppy seeds

1/4 teaspoon fine sea salt

1/2 cup chopped fresh fruit (such as strawberries, blueberries, or peaches) for topping (optional)

Instructions

Prepare the Base: In a large mixing bowl, add the Greek yogurt, almond milk, honey (or maple syrup), vanilla extract, almond butter, sea salt, and poppy seeds. Using an electric mixer or a whisk, blend the mixture together until smooth and creamy, ensuring all ingredients are well combined.

Incorporate Almonds: Gently fold in the sliced almonds using a spatula or wooden spoon, making sure they are evenly distributed throughout the yogurt mixture without overmixing.

Line the Pan: Take an 8x8 inch baking dish and line it with parchment paper, leaving some overhang on the sides. This will make it easier to lift the bars out later.

Pour and Spread: Carefully pour the yogurt mixture into the lined baking dish. Use a spatula to spread it evenly, ensuring that the surface is smooth and level.

Add Optional Toppings: If you like, sprinkle the chopped fresh fruit evenly over the top of the yogurt mixture. This adds a burst of flavor and a pop of color.

Freeze: Place the filled baking dish in the freezer. Allow it to freeze for at least 4 to 6 hours, or until the mixture is completely solid.

Cut the Bars: After freezing, remove the dish from the freezer. Using the parchment paper overhang, lift the entire block out and place it on a cutting board. Use a sharp knife to cut into bars or squares of your preferred size.

Serve: These bars can be enjoyed immediately; however, for best flavor and texture, store them in an airtight container in the freezer. They are good for up to two weeks!

Thaw Before Eating: For a softer texture, let the bars sit at room temperature for about 5 minutes before enjoying.

Prep Time: 15 minutes | Total Time: 6 hours (including freezing) | Servings: 12 bars

Presentation Tips: Serve the bars on a decorative platter, garnished with additional fresh fruit or a drizzle of honey for an elegant touch. You can also wrap individual bars in parchment for a delightful grab-and-go snack!
