Frozen Watermelon Lime Popsicles

4 cups fresh seedless watermelon, cubed

1/2 cup freshly squeezed lime juice (approximately 4-5 limes)

1/4 cup honey or agave syrup (adjust to your sweetness preference)

1 teaspoon lime zest (optional for an extra citrus kick)

A pinch of sea salt

Instructions
 

Prepare the Watermelon: Begin by slicing the watermelon into small, even cubes. Opt for a seedless variety to ensure a smooth and enjoyable texture. Place the cubed watermelon into a blender.

    Blend the Mixture: Add the freshly squeezed lime juice, honey or agave syrup, and a pinch of sea salt to the blender. If you choose to include lime zest for additional zing, add that as well. Blend on high speed until the mixture is completely smooth and well combined, which should take about 30 to 60 seconds.

      Taste and Adjust: Perform a taste test on the blended mixture. If you prefer a sweeter flavor, simply add a touch more honey or agave syrup and blend again until fully incorporated.

        Pour into Popsicle Molds: Carefully pour the blended mixture into popsicle molds. Make sure to leave a small gap at the top of each mold, as the liquid will expand as it freezes.

          Insert Popsicle Sticks: If your molds come with a built-in lid and sticks, securely place them on top. If not, wait about an hour after placing the molds in the freezer (once the mixture begins to firm up slightly) and then insert sticks into the center of each mold.

            Freeze Until Solid: Position the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until the popsicles are completely solid.

              Unmold and Serve: To remove the popsicles from their molds, run the outside of the molds under warm water for a few seconds until they easily slide out. Serve immediately and relish on a sunny day!
