Frozen Strawberry Kiwi Smoothie Pops

Ingredients
  

2 cups fresh strawberries, hulled and sliced

2 ripe kiwis, peeled and diced

1 cup coconut yogurt (or Greek yogurt for a tangy twist)

1/2 cup coconut milk (or any milk of your choice)

2 tablespoons honey or maple syrup (adjust according to your desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Base: In a high-speed blender, combine the sliced strawberries, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend on high until the mixture is incredibly smooth and creamy. Taste the blend, and adjust the sweetness based on your preference.

    Layer the Flavors:

      - Carefully pour a third of the strawberry mixture into each popsicle mold, filling them about one-third of the way full.

        - Layer the diced kiwi on top of the strawberry base, distributing it evenly for an attractive color contrast. Use the back of a spoon to gently press the kiwi down, allowing it to mingle slightly with the strawberry layer.

          Add the Kiwi Layer: Pour the remaining strawberry mixture into each mold until almost full, leaving just a tiny bit of space at the top to allow for expansion as the pops freeze. If you’d like some extra texture, add a few more kiwi pieces on top before sealing.

            Insert Sticks & Freeze: Insert popsicle sticks into the center of each mold. Place them in the freezer and let the pops freeze for at least 4 to 6 hours, or until they are firmly solid.

              Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds to loosen them. Carefully pull the pops out. If serving right away, consider garnishing with freshly chopped mint leaves for a splash of color and fragrance.
