Ingredients

2 cups fresh or frozen strawberries, hulled

1 cup Greek yogurt (choose plain for tartness or vanilla for sweetness)

¼ cup honey or maple syrup (adjust to taste based on your sweetness preference)

2 tablespoons chia seeds

1 teaspoon pure vanilla extract

½ teaspoon freshly squeezed lemon juice

A pinch of salt

Instructions

Prepare the Strawberries: If using fresh strawberries, rinse them thoroughly under cool water, then hull (remove the green tops) and slice them. For frozen strawberries, let them thaw for about 10 minutes until they're slightly soft, then chop into smaller, bite-sized pieces.

Blend the Base: In a blender or food processor, add the prepared strawberries, Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a tiny pinch of salt. Blend the mixture on medium speed until it achieves a smooth and creamy consistency. If desired, pulse a few times to retain small chunks of strawberry for added texture.

Incorporate Chia Seeds: Transfer the blended strawberry-yogurt mixture into a large mixing bowl. Gently fold in the chia seeds using a spatula, ensuring they are well-distributed throughout the mix for optimal texture.

Set the Mixture: Line an 8x8-inch square baking dish with parchment paper, allowing some overhang for easy removal later. Pour the combined yogurt mixture into the dish and use a spatula to spread it evenly and smooth the top.

Freeze: Cover the baking dish tightly with plastic wrap to prevent ice crystals from forming. Place the dish in the freezer and let it freeze for about 4 hours, or until the mixture is completely firm and set.

Cut into Squares: After the mixture has frozen, remove the dish from the freezer. Carefully lift the yogurt block out using the overhanging parchment paper. Place it on a cutting board and cut it into squares or bars of your desired size (12 squares work well).

Serve: Enjoy these delightful squares straight from the freezer for a refreshing treat. Store any leftovers in an airtight container in the freezer for up to a month. For a creamier treat, allow the squares to thaw for a few minutes before serving.
