1 ½ cups fresh strawberries, hulled and sliced

2 tablespoons honey or agave syrup (adjust based on your desired sweetness)

1 teaspoon fresh lemon juice

8 oz cream cheese, softened to room temperature

½ cup plain or vanilla Greek yogurt

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup crushed graham crackers (for the crust)

12 popsicle molds and sticks

Instructions
 

Prepare the Strawberries:

    - In a blender or food processor, combine the sliced strawberries, honey (or agave syrup), and lemon juice. Blend until the mixture is smooth and free of large strawberry chunks. Set this strawberry puree aside for later use.

      Make the Cheesecake Filling:

        - In a large mixing bowl, use an electric mixer to beat the softened cream cheese on medium speed until it's smooth and creamy, about 2 minutes.

          - Next, add the Greek yogurt, powdered sugar, and vanilla extract to the bowl. Mix on medium speed until all the ingredients are well-combined and the mixture is light and fluffy.

            Layer the Pops:

              - Start by spooning a layer of the cheesecake filling into each popsicle mold, filling them about one-third of the way.

                - Next, pour the prepared strawberry mixture over the cheesecake layer, filling each mold about two-thirds full.

                  - Top with another spoonful of the cheesecake filling, leaving a little space at the top for expansion. Finish each popsicle by sprinkling a pinch of crushed graham crackers on top for added texture and crunch.

                    Insert Sticks:

                      - Carefully place popsicle sticks into the center of each mold, ensuring they are straight and secure.

                        Freeze:

                          - Transfer the molds to the freezer and allow them to freeze for at least 4-6 hours, or until the popsicles are completely solid.

                            Unmold and Enjoy:

                              - To remove the pops from the molds, briefly run warm water over the outside of each mold. Gently wiggle the sticks to release the popsicles. Serve immediately, or store any leftovers in an airtight container in the freezer for future enjoyment.
