Ingredients

2 ripe mangoes, peeled and diced

1 cup full-fat coconut cream (for optimal creaminess)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

1/2 cup unsweetened shredded coconut

1/4 cup chopped nuts (such as almonds or pistachios)

A pinch of sea salt

Silicone molds or a mini muffin tin

Instructions

Prepare the Mangoes: In a blender or food processor, add the diced mangoes, coconut cream, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Blend the ingredients at high speed until you achieve a smooth and creamy consistency.

Mix the Ingredients: Once the mango-coconut mixture is smooth, use a spatula to gently fold in the shredded coconut and chopped nuts. This ensures an even distribution of textures and flavors throughout the creamy blend.

Mold the Mixture: Carefully pour the mango-coconut mixture into silicone molds or a mini muffin tin. Fill each mold about three-quarters of the way to allow room for the mixture to expand as it freezes.

Freeze the Bites: Transfer the filled molds or tin to the freezer. Let the bites freeze for a minimum of 4-6 hours, or until they are completely solid.

Unmold and Serve: After freezing, gently remove the bites from their molds. If using a muffin tin, you can run warm water over the outside for a few seconds to facilitate easy release.

Garnish (Optional): For an elegant finishing touch, roll the frozen bites in extra shredded coconut before serving or drizzle with a small amount of melted chocolate to enhance the flavor and presentation.

Storage: Store the frozen mango coconut bites in an airtight container in the freezer where they will keep for up to two weeks—if they aren’t devoured before then!

Prep Time: 15 minutes | Total Time: 4-6 hours (freezing time not included) | Servings: 12-15 bites

Feel free to enjoy these delightful bites as a refreshing snack or a guilt-free dessert!
