2 large grapefruits

1/4 cup honey or agave syrup (adjust according to sweetness preference)

1/2 cup water

1 teaspoon fresh mint leaves, finely chopped (optional)

1/4 teaspoon sea salt

Sparkling water or club soda, for serving

Fresh mint leaves and thin grapefruit slices for garnish

Instructions
 

Prepare the Grapefruit: Slice the grapefruits in half and gently scoop out the flesh using a spoon, ensuring the rinds remain intact for serving. Set aside the rinds, which will serve as your cups. You can enjoy the scooped-out flesh as a snack or incorporate it into another recipe.

    Juicing: In a blender or food processor, combine the scooped grapefruit flesh, honey or agave syrup, water, and sea salt. Blend thoroughly until the mixture is completely smooth. If you enjoy a slightly chunkier texture, blend briefly until just combined.

      Chill the Mixture: Strain the blended mixture through a fine sieve or cheesecloth into a bowl to remove any excess pulp. Pour the resulting juice into ice cube trays or small cups.

        Freeze: Place the trays or cups in the freezer for approximately 2 hours, or until the mixture is partially frozen and has a somewhat slushy texture.

          Scrape the Mixture: Once the mixture is partially frozen, use a fork to scrape and fluff the surface, creating light, airy granita-like bits. If you opt for an added burst of freshness, mix in the finely chopped mint at this stage.

            Refreeze: Spread the fluffed mixture evenly back into the cups or trays and return them to the freezer for an additional 2-3 hours, or until completely frozen and fluffy.

              Serve: To serve, fluff the frozen grapefruit mixture once more with a fork for a light and fluffy texture. Spoon this mixture back into the grapefruit rinds. When ready to enjoy, pour a splash of sparkling water or club soda over each cup, creating a delightful fizzy effect.
