2 ripe mangoes, peeled and diced

1 cup coconut milk (from a can or carton for creaminess)

1/4 cup honey or maple syrup (adjust to your desired sweetness)

1 tablespoon fresh lime juice

1/2 teaspoon pure vanilla extract

A pinch of salt

    Mix Coconut Base: In a medium bowl, whisk together the coconut milk, honey or maple syrup, fresh lime juice, vanilla extract, and a pinch of salt until everything is thoroughly combined and smooth.

      Layer the Popsicles: Begin filling your popsicle molds by pouring a layer of the coconut mixture into each mold, filling them about one-third full. Follow this with a layer of the mango puree on top. If you reserved diced mango, sprinkle some in here to create delightful bursts of flavor. Continue layering until the molds are nearly full, leaving a little space at the top for the final layer of coconut mix.
