Ingredients

1 pound large strawberries, with stems removed

8 oz cream cheese, softened to room temperature

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup crushed graham crackers

1 tablespoon freshly squeezed lemon juice

1/4 teaspoon salt

Optional: Dark chocolate or white chocolate for drizzling

Instructions

Prep the Strawberries: Start by gently washing the strawberries under cool, running water. Pat them dry using a clean paper towel. Carefully remove the green stems and use a small paring knife, or a specialized corer, to hollow out the center of each strawberry. Take care to ensure the bottom remains intact to hold the filling.

Make the Cheesecake Filling: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, lemon juice, and salt. Using an electric mixer on medium speed, beat the mixture until it achieves a smooth and creamy consistency, about 2-3 minutes.

Add the Crunch: Gently fold in the crushed graham crackers with a spatula until they are evenly distributed throughout the cream cheese mixture, making sure no large clumps remain.

Fill the Strawberries: Take a piping bag fitted with a round tip or use a small spoon to carefully fill each prepared strawberry with the cheesecake mixture. Pack the filling gently to the top of each berry without forcing it out.

Freeze the Strawberries: Place the filled strawberries on a baking sheet lined with parchment paper, ensuring they are not touching to avoid sticking. Transfer the tray to the freezer and freeze for a minimum of 2 hours, allowing the cheesecake filling to firm up.

Drizzle with Chocolate (Optional): If you’d like to add an indulgent touch, melt dark or white chocolate in a microwave-safe bowl in 20-second intervals, stirring after each until smooth. Once melted, drizzle the chocolate over the frozen cheesecake-stuffed strawberries just before serving.

Serve and Enjoy: After freezing, transfer the strawberries to an airtight container and keep them stored in the freezer until you’re ready to indulge. These delightful bites are best enjoyed straight from the freezer for a refreshing and creamy treat!
