Ingredients

2 cups fresh or frozen blackberries

2 cups plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 tablespoon freshly squeezed lemon juice

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prep the Blackberries: If you're using fresh blackberries, rinse them lightly under cool running water and allow them to dry. For frozen blackberries, let them thaw for about 10 minutes, then drain off any excess liquid.

Blend the Ingredients: In a blender or food processor, combine the blackberries, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend the mixture until it reaches a smooth and creamy consistency, ensuring the blackberries are thoroughly mixed in.

Prepare the Ring Molds: For best results, use silicone ring molds to facilitate easy removal. If you don’t have silicone molds, muffin tins lined with cupcake liners will work just as well.

Fill the Molds: Carefully pour the yogurt mixture into your prepared molds, filling each ring almost to the top. For added texture and a burst of flavor, consider reserving some whole blackberries to place atop each ring before freezing.

Freeze the Yogurt Rings: Place the filled molds in the freezer and allow them to freeze for a minimum of 4 hours, or until the yogurt rings are completely solid.

Unmold the Rings: When fully frozen, gently remove the yogurt rings from the molds. You can do this by pushing up from the bottom or by running warm water over the outside of the molds for a few seconds to help loosen the rings.

Serve and Garnish: Serve the frozen yogurt rings immediately, garnished with fresh mint leaves if you wish. These delightful treats are sure to provide a refreshing break!

Store Remaining Rings: Any leftover rings can be safely stored in a sealed plastic bag or airtight container in the freezer for up to 2 weeks.
