Ingredients

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

4 large flour tortillas

1 cup shredded lettuce (green or romaine)

1 cup diced ripe tomatoes

1 avocado, sliced into thin wedges

1/2 cup corn (canned or fresh)

1/2 cup black beans, rinsed and drained

1/4 cup fresh cilantro, roughly chopped

1/2 cup shredded cheese (cheddar or a Mexican blend)

1/4 cup sour cream or Greek yogurt for a tangy kick

1 lime, quartered for serving

Instructions

Marinate Chicken: In a medium mixing bowl, whisk together the olive oil, chili powder, ground cumin, garlic powder, and a generous sprinkle of salt and black pepper. Add the chicken breasts, ensuring they are fully coated with the marinade. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

Cook Chicken: Heat a grill or a skillet over medium-high heat until sizzling. Add the marinated chicken breasts and cook for 6-7 minutes on each side, or until they are golden brown and cooked through (the internal temperature should read 165°F or 75°C). Once cooked, remove the chicken from the heat and allow it to rest on a cutting board for a few minutes before slicing it into thin strips.

Prepare Tortillas: While the chicken rests, warm the flour tortillas to make them soft and easy to wrap. You can do this by placing them in a dry skillet over low heat for about 30 seconds on each side, or by microwaving them wrapped in a damp paper towel for 10-15 seconds.

Assemble Wraps: Lay each warm tortilla flat on a clean surface. Begin layering by placing a handful of shredded lettuce in the center of each tortilla. Follow with the diced tomatoes, avocado slices, corn, black beans, and finally, the sliced chicken on top. Sprinkle each wrap with the chopped cilantro and shredded cheese.

Add Sauce: Drizzle your choice of sour cream or Greek yogurt over the top of the fillings for an extra dose of creaminess and flavor.

Wrap It Up: Start at the bottom of the tortilla and fold up the bottom edge over the fillings. Then, fold in the sides, and roll the tortilla tightly from the bottom to the top to fully encase the ingredients.

Serve: Cut each wrap in half diagonally for a beautiful presentation, and serve immediately with lime wedges on the side. Squeeze the lime over the wraps for a refreshing burst of flavor.
