1 cup all-purpose flour

1 tablespoon baking powder

1 cup pumpkin puree (canned or freshly made)

1/2 cup milk (your choice of dairy or non-dairy)

2 large eggs

2 tablespoons brown sugar, packed

1 teaspoon vanilla extract

3 tablespoons melted butter (or coconut oil for a dairy-free substitute)

Cooking spray or additional butter for greasing the pan

Instructions
 

In a medium mixing bowl, combine the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. Whisk them together thoroughly to ensure even distribution of the dry ingredients. Set this mixture aside for later.

    In a large bowl, blend the pumpkin puree, milk, eggs, brown sugar, and vanilla extract until the mixture is smooth and homogeneous. Pour in the melted butter and stir well until it is fully combined.

      Slowly incorporate the dry ingredients into the pumpkin mixture. Use a spatula or wooden spoon to mix gently until just combined, being careful not to overmix; a few small lumps are perfectly acceptable.

        Preheat your mini muffin tin or pancake bite maker as instructed by the manufacturer. Lightly coat the cavities with cooking spray or butter to prevent sticking.

          Spoon about 2 tablespoons of batter into each mini muffin cup or pancake bite cavity, making sure not to overfill them (the bites will expand while cooking).

            For a mini muffin tin, bake in a preheated oven at 350°F (175°C) for about 10-12 minutes, or until the tops feel springy to the touch. If using a pancake bite maker, close the lid and cook according to the appliance instructions, which usually takes about 4-5 minutes until they achieve a golden brown color.

              Once cooked, carefully remove the pancake bites from the pan and transfer them to a wire rack to cool slightly.
