1 medium green bell pepper, sliced thinly

1 medium onion, sliced thinly

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon ground coriander

1 teaspoon salt

1/2 teaspoon ground black pepper

Fresh cilantro, chopped, for garnish

Marinate the Chicken: In a medium bowl, mix together the sliced chicken, olive oil, lime juice, lime zest, and half of the minced garlic. Sprinkle in the salt, black pepper, cumin, smoked paprika, and coriander. Stir well to coat the chicken thoroughly. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a deeper flavor.

    Prepare the Vegetables: While the chicken marinates, prepare the vegetables by slicing the jalapeños, red and green bell peppers, and onion. Set aside in a bowl for easy access.
