1 large eggplant, cut into 1/2-inch thick rounds

2 tablespoons olive oil (plus extra for brushing)

8 slices of fresh mozzarella cheese

1 large ripe tomato, sliced into rounds

10-12 fresh basil leaves

4 slices of rustic bread (such as ciabatta or sourdough)

Balsamic glaze, for drizzling

Prepare the Eggplant: Start by preheating your grill or grill pan to medium heat. While it heats up, brush both sides of the eggplant slices with olive oil, and generously season them with salt and pepper. Once hot, place the eggplant on the grill and cook for about 4-5 minutes on each side, or until tender and exhibiting beautiful grill marks. Remove the eggplant from the grill and set aside to cool slightly.

    Assemble the Sandwich: Take the first slice of bread and layer it with a grilled eggplant round. Top it with 2 slices of fresh mozzarella, followed by a slice of tomato, and a few fresh basil leaves. Drizzle a small amount of balsamic glaze over these ingredients for an extra burst of flavor.
