2 cups cooked jasmine rice (preferably day-old for optimal texture)

1 cup pork tenderloin, thinly sliced

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 cup mixed vegetables (such as peas, carrots, and corn)

2 green onions, finely chopped

2 large eggs, lightly beaten

3 cloves garlic, minced

Salt and fresh black pepper to taste

Cooking oil (vegetable or canola) for frying

Prepare the Pork: In a small mixing bowl, combine the thinly sliced pork tenderloin with soy sauce and a pinch of black pepper. Allow the pork to marinate for at least 15 minutes to enhance its flavor and tenderness.

    Heat the Pan: Place a large non-stick skillet or wok over medium-high heat and add 1 tablespoon of cooking oil. Allow the oil to heat until shimmering but not smoking.

      Cook the Pork: Carefully add the marinated pork to the hot skillet. Stir-fry for approximately 3 to 5 minutes, or until the pork is fully cooked and golden brown on the outside. Once done, use a slotted spoon to remove the pork from the skillet and set it aside on a plate.

        Scramble the Eggs: In the same skillet, pour in the beaten eggs. Allow them to cook undisturbed for a few moments, then quickly scramble until just set. Once cooked, transfer the scrambled eggs to the plate with the pork.

          Sauté the Vegetables: If needed, add another tablespoon of cooking oil to the skillet. Toss in the minced garlic and stir-fry for about 30 seconds until fragrant and slightly golden.                 Finish with Green Onions: Stir in the chopped green onions, adjusting the seasoning with salt and freshly ground black pepper to taste. Allow to cook for an additional minute, then remove from heat.
