Ingredients

1 cup water

½ cup unsalted butter

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

½ teaspoon salt

Powdered sugar for dusting (optional)

Chocolate sauce or fruit preserves for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper to prevent sticking and for easy clean-up.

Prepare the Dough: In a medium-sized saucepan, combine the water and unsalted butter. Place the saucepan over medium heat and bring the mixture to a vigorous boil, stirring frequently until the butter has fully melted. Once boiling, carefully remove the saucepan from the heat.

Add Flour and Mix: Immediately add the sifted flour and salt to the melted butter-water mixture. Using a sturdy wooden spoon, stir vigorously for about 1-2 minutes until the mixture forms a smooth, cohesive ball of dough that pulls away from the sides of the pan.

Incorporate Eggs: Allow the dough to cool for a few minutes. Once it’s lukewarm, add the eggs one at a time, mixing well after each addition until fully incorporated. The final mixture should be glossy and smooth with no lumps. Stir in the vanilla extract until evenly combined.

Shape the Puffs: Using a pastry bag fitted with a large round tip or a regular spoon, drop generous tablespoonfuls of dough onto the prepared baking sheet. Be sure to leave about 2 inches of space between each puff to allow for rising and expansion in the oven.

Bake: Carefully place the baking sheet in the preheated oven and bake for 20-25 minutes. The puffs should rise beautifully and turn golden brown. To ensure they puff up properly, avoid opening the oven door during the first 15 minutes of baking.

Cool: Once baked to perfection, remove the puffs from the oven and let them cool slightly on a wire rack. This allows excess steam to escape, keeping them light and airy.

Serve: Just before serving, dust the warm puffs with powdered sugar, if desired. For an indulgent touch, offer chocolate sauce or fruit preserves on the side for dipping.

Prep Time, Total Time, Servings: 15 minutes | 40 minutes | Makes approximately 12 puffs.
