Ingredients

1 pound ground pork (or opt for ground turkey for a lighter version)

2 cups coleslaw mix (alternative: shredded cabbage and carrots)

3 green onions, chopped (reserve some for garnish)

2 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

2 tablespoons low-sodium soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for added heat)

Sesame seeds, for garnish

Salt and black pepper, to taste

Instructions

Brown the Meat: In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the ground pork (or turkey), breaking it apart with a spatula. Cook for 5-7 minutes, or until the meat is thoroughly browned and no longer pink. Drain any excess fat from the skillet if necessary.

Add Aromatics: Incorporate the minced garlic and ginger into the skillet. Sauté for about 1 minute or until the mixture is fragrant, stirring continuously to avoid burning.

Incorporate Veggies: Add the coleslaw mix and half of the chopped green onions to the skillet. Stir well and continue to cook for 3-5 minutes, or until the cabbage is slightly wilted and tender. Make sure to stir continuously for even cooking.

Flavor It Up: Pour in the soy sauce, rice vinegar, and sriracha (if desired). Mix thoroughly to ensure all ingredients are evenly coated. Allow the mixture to cook for an additional 2-3 minutes to let the flavors meld together beautifully.

Season: Taste the mixture and adjust seasoning with salt and black pepper as needed.

Serve: Remove from heat and divide the mixture among serving bowls. Garnish with the remaining chopped green onions and a sprinkle of sesame seeds for added crunch and flavor.

Enjoy: Serve hot and relish this flavorful, deconstructed egg roll dish!
