1 medium yellow bell pepper, sliced into thin strips

1 medium green bell pepper, sliced into thin strips

1 medium onion, thinly sliced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 fresh lime

8 small flour tortillas

Fresh cilantro, chopped (for garnish)

Marinate the Chicken: In a medium mixing bowl, combine the sliced chicken strips with 2 tablespoons of olive oil, minced garlic, ground cumin, chili powder, smoked paprika, salt, black pepper, and the juice of 1 lime. Mix everything thoroughly until the chicken is well coated in the marinade. For optimal flavor, cover the bowl and let it marinate in the refrigerator for at least 15-30 minutes.

    Sauté the Veggies: In a large cast-iron skillet or a non-stick frying pan, heat a splash of olive oil over medium-high heat. Once the oil is hot, add the sliced onions and bell peppers.
