Ingredients

2 cups cooked rice (choose from white, brown, or cauliflower rice)

1 lb boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 bell pepper (choose red, yellow, or green), sliced into thin strips

1 medium onion, sliced into thin rings

1 tablespoon fajita seasoning (store-bought or homemade)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sour cream or Greek yogurt (optional, for garnish)

Instructions

Prep the Chicken: In a mixing bowl, place the sliced chicken breast. Sprinkle in the fajita seasoning, along with a pinch of salt and pepper. Using your hands or a spoon, mix well to ensure the chicken is evenly coated with the seasoning.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken strips to the skillet. Sauté for approximately 5-7 minutes, or until the chicken is fully cooked through and no longer pink in the center. Remove the chicken from the skillet and transfer it to a plate, leaving the juices in the pan.

Sauté the Veggies: In the same skillet, add the sliced bell pepper and onion to the remaining juices. Sauté the vegetables for about 4-5 minutes, stirring occasionally, until they are softened and have developed a slight char.

Combine Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Add the halved cherry tomatoes and stir everything together, cooking for an additional 2-3 minutes until the tomatoes are warmed through and combined.

Assemble the Bowls: Prepare serving bowls and start layering by placing a generous portion of the cooked rice at the bottom of each bowl. Top the rice with the chicken and vegetable mixture.

Add Toppings: Enhance each rice bowl with sliced avocado, a sprinkle of shredded cheese, a handful of chopped cilantro, and, if desired, a dollop of sour cream or Greek yogurt.

Serve: Finish the bowls by squeezing fresh lime juice over the top for a burst of brightness. Serve warm, accompanied by lime wedges on the side for extra zest.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the bowls on colorful plates for a vibrant look. Consider adding extra cilantro on top for a fresh pop of color, and arrange lime wedges artistically around the dish.
