Ingredients

1 cup fresh or frozen corn kernels

1/2 cup all-purpose flour

1/2 cup grated cheddar cheese (or your cheese of choice)

1/4 cup green onions, finely chopped

1/4 cup milk

2 large eggs

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and black pepper to taste

Oil for frying (vegetable or olive oil)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the corn kernels, grated cheddar cheese, and finely chopped green onions. Stir the mixture thoroughly until all ingredients are evenly distributed.

Mix the Wet Ingredients: In a separate medium bowl, whisk together the eggs and milk until the mixture is smooth and well combined.

Combine Ingredients: Gradually pour the egg and milk mixture into the corn mixture, stirring gently. Mix just until everything is combined, being careful not to overmix.

Add Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, garlic powder, paprika, and a pinch of salt and black pepper. Slowly fold this dry mixture into the corn mixture, stirring until there are no dry flour spots. It’s perfectly fine if the batter has a few small lumps!

Heat the Oil: In a large frying pan, pour in enough oil to cover about 1/4 inch of the bottom. Heat the oil over medium heat. To check if the oil is ready, drop a small spoonful of batter into the pan; it should sizzle immediately.

Fry the Fritters: Using a tablespoon, scoop about 2 tablespoons of the batter for each fritter and carefully drop it into the hot oil. Fry the fritters in batches, making sure not to crowd the pan. Cook for 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to avoid burning.

Drain and Serve: Once cooked, use a slotted spoon to transfer the fritters to a plate lined with paper towels to absorb any excess oil.

Enjoy: Serve the fritters warm, accompanied by your choice of dipping sauce such as sour cream, salsa, or a zesty spicy aioli. These cheesy corn fritters make for a delightful appetizer or a tasty snack!
