At the heart of this stir-fry is beef sirloin, a cut known for its rich flavor and tenderness. Sirloin is a popular choice for stir-frying due to its relatively lower fat content compared to other cuts, making it a healthier option without sacrificing taste. The marbling in sirloin provides just enough fat to keep the meat juicy while allowing it to absorb the flavors of the sauces and seasonings used in the dish.

Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups mixed vegetables (such as bell peppers, broccoli, and snap peas)

3 cups cooked jasmine rice (or your preferred variety)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for added depth)

2 tablespoons vegetable oil (divided)

2 cloves garlic, finely minced

1 teaspoon fresh ginger, finely minced

1 tablespoon cornstarch (for coating the beef)

Salt and pepper to taste

2 green onions, finely chopped (for garnish)

A sprinkle of sesame seeds (for garnish)

Instructions

Prep the Beef: In a mixing bowl, coat the thinly sliced beef with cornstarch, ensuring each piece is evenly covered. This step not only tenderizes the beef but also enhances its texture when cooked. Allow the beef to marinate briefly while you prepare the other ingredients.

Prepare the Vegetables: Rinse and chop your mixed vegetables into bite-sized pieces if they are not pre-cut. Making sure the pieces are uniform will help them cook evenly and quickly.

Cook the Rice: If you haven't done so already, prepare the jasmine rice according to the package instructions. For the best stir-fry result, using leftover rice is recommended as it tends to fry up more nicely without becoming mushy.

Heat the Wok: Place a large wok or deep skillet over medium-high heat, adding 1 tablespoon of vegetable oil. Once the oil is shimmering, add the beef slices in batches to prevent overcrowding. Sear the beef for about 2-3 minutes until it's browned and cooked to your desired level. Remove the beef from the wok and set it aside.

Sauté Aromatics: In the same wok, add the remaining tablespoon of vegetable oil. After it heats up, toss in the minced garlic and ginger. Stir-fry for about 30 seconds or until they are fragrant, being careful not to burn them.

Stir-Fry the Veggies: Add your mixed vegetables to the wok, stirring frequently for about 4-5 minutes. The goal is to cook them until they're tender yet still have a crisp bite.

Combine Everything: Return the cooked beef to the wok, mixing it with the vegetables. Pour in the soy sauce and the oyster sauce (if desired), tossing everything together for another 2 minutes. This will allow the flavors to meld. Taste and season with salt and pepper as needed.

Serve: Spoon the beef and veggie stir-fry over a generous serving of hot, steamed rice. Garnish with finely chopped green onions and a sprinkle of sesame seeds for an added touch of flavor and visual appeal.

Enjoy Your Meal!: Serve the stir-fry hot and savor your colorful and nutritious dish, perfect for any weeknight dinner.
