2 medium cucumbers, peeled and diced

1 ripe avocado, pitted and chopped

1 cup chilled vegetable or chicken broth

1/2 cup Greek yogurt or plant-based yogurt of your choice

1 tablespoon freshly squeezed lemon juice

1 clove garlic, minced

1 tablespoon fresh dill or mint, finely chopped (plus extra for garnishing)

Salt and freshly ground black pepper, to taste

Optional: 1/4 teaspoon cayenne pepper for a spicy kick

Prepare the Vegetables: In a large mixing bowl, combine the diced cucumbers, chopped avocado, minced garlic, and your choice of chopped herbs (dill or mint). Mix gently to combine.

    Blend the Base Ingredients: Pour the cucumber and avocado mixture into a blender. Add the chilled vegetable broth, Greek yogurt, lemon juice, and cayenne pepper (if you’re adding some heat).

      Blend Until Smooth: With the lid securely on, blend the mixture on high speed until it reaches a silky, smooth consistency. If the soup appears too thick, gradually add more chilled broth until your desired texture is achieved.

        Season the Soup: Taste the blended mixture and season with salt and freshly ground black pepper according to your preferences. Blend briefly again to ensure even distribution of the seasoning.

          Chill the Soup: Pour the prepared soup into a bowl or an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld and to serve the soup chilled.
