Ingredients

4 cups green cabbage, finely shredded

2 cups purple cabbage, finely shredded

1 large carrot, julienned

1 red bell pepper, diced

1 cup fresh cilantro, roughly chopped

1/2 cup green onions, sliced

1/2 cup roasted salted peanuts, coarsely chopped

1/4 cup sesame seeds, toasted (optional)

For the Dressing:

1/4 cup smooth peanut butter

3 tablespoons low-sodium soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup (for a vegan alternative)

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

Salt and black pepper to taste

Instructions

Prep the Vegetables: In a spacious mixing bowl, combine the finely shredded green cabbage and purple cabbage along with the julienned carrot, diced red bell pepper, roughly chopped cilantro, and sliced green onions. Gently toss the vegetables together until they are evenly mixed, ensuring a colorful blend.

Make the Dressing: In a separate small bowl, use a whisk to blend together the smooth peanut butter, low-sodium soy sauce, rice vinegar, honey (or maple syrup), sesame oil, minced garlic, grated ginger, and lime juice. Continue whisking until the mixture is smooth and creamy. If the dressing appears too thick, you can stir in a small amount of water to achieve your desired consistency. Taste the dressing and adjust with salt and black pepper as needed.

Combine the Slaw and Dressing: Drizzle the prepared dressing over the vegetable mixture and toss everything together thoroughly, ensuring that each piece of vegetable is well-coated with the dressing. Allow the slaw to sit for approximately 10 minutes to give the flavors a chance to meld beautifully.

Add Crunch: Right before serving, gently fold in the coarsely chopped roasted peanuts and, if using, the toasted sesame seeds. This will enhance the slaw with added texture and crunch.

Serve: Transfer the slaw to a serving dish, and feel free to garnish with a sprinkle of extra sesame seeds on top for visual appeal. This slaw can be enjoyed chilled or at room temperature, making it a versatile side dish.
