Ingredients

1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1/2 cup cornstarch

1 large egg, beaten

1 cup panko breadcrumbs

1 tablespoon sesame oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon ground ginger

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds

2 green onions, chopped (for garnish)

Instructions

Prep the Chicken: In a large mixing bowl, add the bite-sized chicken pieces. Sprinkle with salt, black pepper, garlic powder, onion powder, and ground ginger. Use your hands to toss the chicken, ensuring each piece is evenly coated with the seasoning.

Breading Setup: Set up a breading station with three shallow bowls. In the first bowl, add the cornstarch. In the second bowl, pour in the beaten egg. In the third bowl, combine the panko breadcrumbs with the sesame oil, mixing well to coat the breadcrumbs.

Bread the Chicken: Take each piece of chicken and first dredge it in the cornstarch, shaking off any excess. Next, dip it into the beaten egg, allowing any excess to drip back into the bowl. Finally, coat the chicken thoroughly with the panko breadcrumb mixture, pressing gently to ensure the breadcrumbs adhere. Place the breaded chicken on a plate or wire rack while you repeat the process with the remaining pieces.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes, ensuring it’s hot and ready for cooking.

Air Fry the Chicken: Arrange the breaded chicken pieces in the air fryer basket in a single layer, making sure not to overcrowd them. If necessary, cook in batches. Air fry for 10-12 minutes, flipping the chicken halfway through cooking for even crispness, until the chicken is golden brown and has a crunchy coating.

Make the Sauce: In a small saucepan over medium heat, combine the honey, soy sauce, and rice vinegar. Stir the mixture gently and bring it to a simmer. Let it cook for about 3-4 minutes, stirring continuously until the sauce slightly thickens. Remove from heat and stir in the sesame seeds.

Combine: Once the chicken is finished cooking, transfer it to a large mixing bowl. Drizzle the warm sauce over the chicken pieces and toss gently until every piece is evenly coated in the sauce.

Serve: Transfer the sesame chicken to a serving platter or individual bowls. Garnish with chopped green onions and sprinkle with extra sesame seeds if desired. Serve immediately, paired with steamed rice or a fresh salad for a complete meal.
