1 large eggplant

1 cup all-purpose flour

2 large eggs

1 cup seasoned breadcrumbs (or panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

Olive oil spray

      Set Up Breading Station:

        - Create a breading assembly line using three shallow bowls:

          - First Bowl: Add the all-purpose flour.

            - Second Bowl: Crack the eggs into a bowl and whisk them vigorously until well combined and slightly frothy.

              - Third Bowl: Mix the seasoned breadcrumbs with garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly distributed.

                Coat the Eggplant:

                  - Take one slice of eggplant and dip it into the flour, ensuring it is fully coated. Gently shake off any excess flour.                     Preheat the Air Fryer:

                        Arrange in the Air Fryer:

                            Cook:
