4 large whole wheat tortillas

4 large eggs

1 cup cooked and crumbled turkey sausage (or your choice of protein)

1 medium bell pepper, finely chopped (your choice of color)

1 small onion, diced

1 cup shredded sharp cheddar cheese

1 cup fresh spinach, chopped

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Optional: hot sauce or salsa for serving

Prep the Filling: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the diced onion and chopped bell pepper. Sauté for about 3-4 minutes, or until the vegetables are tender and fragrant.

    Add Protein and Spinach: Stir in the crumbled turkey sausage and chopped spinach, cooking until the spinach wilts, which should take about 1-2 minutes. Season the mixture with garlic powder, paprika, salt, and pepper, mixing everything thoroughly. Remove the skillet from heat and set the filling aside to cool slightly.

      Scramble the Eggs: In a separate bowl, crack the eggs and whisk them together, adding a pinch of salt and pepper. Return the same skillet to medium heat and add the remaining tablespoon of olive oil. Pour the eggs into the skillet and stir continuously for 3-5 minutes, or until the eggs are fully scrambled and just cooked through.

        Combine Filling: Add the scrambled eggs to the skillet containing the sausage and vegetable mixture. Stir well to combine all the ingredients evenly and allow the filling to cool down further.

          Assemble the Wraps: On a clean surface, lay a tortilla flat. Scoop approximately 1/4 of the filling mixture into the center of the tortilla, then generously sprinkle the top with shredded cheddar cheese.

                Air-Fry the Wraps: Carefully place the wraps in the air fryer basket seam-side down, making sure not to overcrowd them. Air fry for 8-10 minutes, or until the tortillas are crispy and golden brown. To achieve even crispiness, flip the wraps halfway through the cooking time.
