Ingredients

1 lb (450g) smoked sausage, such as kielbasa or bratwurst, sliced into half-moon shapes

3 medium potatoes, diced into small cubes (approximately 1.5 lbs)

1 red bell pepper, chopped

1 green bell pepper, chopped

1 medium onion, diced

2 cups fresh spinach, roughly chopped

3 cloves garlic, minced

2 teaspoons dried thyme

1 teaspoon smoked paprika

1/2 teaspoon ground black pepper

1/2 teaspoon sea salt

1 cup vegetable broth or chicken broth

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Instructions

Prepare the Ingredients: Begin by washing the potatoes thoroughly before dicing them into small cubes. Chop the red and green bell peppers, and dice the onion into small pieces. Roughly chop the fresh spinach and slice the smoked sausage into half-moon shapes for even cooking.

Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the diced onions and bell peppers. Sauté for 3-4 minutes until the vegetables soften, then stir in the minced garlic. Cook for an additional minute until the garlic becomes fragrant and golden.

Combine in the Crockpot: In your crockpot, layer the diced potatoes first, followed by the sautéed vegetables and sliced sausage for even distribution of flavors.

Season and Add Liquids: Evenly sprinkle the dried thyme, smoked paprika, ground black pepper, and sea salt over the mixture in the crockpot. Carefully pour in the vegetable or chicken broth, then drizzle the apple cider vinegar on top to brighten the flavors.

Cook Low and Slow: Secure the lid on the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. The dish is ready when the potatoes are tender, and the sausage is heated through.

Add Spinach: About 30 minutes before the cooking time is complete, open the lid and gently fold in the chopped spinach. Cover again and allow the spinach to wilt into the hash, enhancing the dish's color and nutrition.

Serve: Once cooking is finished, give the hash a gentle stir to incorporate all the flavors. Serve hot, optionally garnishing with fresh herbs like parsley or dill for added freshness and appeal.
