3 lbs beef chuck roast, cut into large chunks

2 dried guajillo chiles

2 dried ancho chiles

1 dried pasilla chile

4 cups beef broth (reserve 1 cup)

1 medium onion, chopped

4 cloves garlic, minced

2 tbsp apple cider vinegar

2 tsp ground cumin

2 tsp dried oregano

1 tsp ground cinnamon

1 tsp smoked paprika

1 tsp black pepper

2 bay leaves

Salt, to taste

Corn tortillas (for serving)

Fresh cilantro, chopped (for garnish)

Diced onion (for garnish)

Lime wedges (for serving)

Queso fresco or shredded cheese (optional)

Instructions
 

Prepare the Chiles: Begin by removing the stems and seeds from the dried guajillo, ancho, and pasilla chiles. In a dry skillet set over medium heat, toast the chiles for about 2-3 minutes until they become fragrant. Keep a close watch to avoid burning them.

    Blend the Sauce: In a blender, combine the toasted chiles (without their stems and seeds), 1 cup of the reserved beef broth, chopped onion, minced garlic, apple cider vinegar, ground cumin, dried oregano, ground cinnamon, smoked paprika, black pepper, and a pinch of salt. Blend the mixture until smooth. If you prefer a thinner sauce, gradually add a bit more beef broth until you reach the desired consistency.

      Season the Beef: In a large mixing bowl, generously season the chunks of beef chuck with salt and pepper, ensuring that the seasoning is evenly distributed.

        Combine in the Crock Pot: Place the seasoned beef into the Crock Pot. Pour the blended sauce over the beef chunks, and then add the bay leaves along with the remaining 3 cups of beef broth. Stir gently to ensure that the beef is well coated with the sauce.

          Cook: Secure the lid on the Crock Pot and cook on low for 8 hours or high for 4 hours, or until the beef is fork-tender and shreds effortlessly.

            Shred the Meat: Once the beef is cooked, carefully remove it from the Crock Pot and use two forks to shred it into bite-sized pieces. Return the shredded meat to the pot and gently stir it back into the flavorful broth.

              Prepare the Tacos: In a separate skillet, heat a small amount of oil over medium heat. Take each corn tortilla and dip it into the broth from the Crock Pot, ensuring it absorbs some of the rich flavor. Then place the dipped tortilla in the skillet. Cook for approximately 30 seconds on each side until it becomes slightly crispy.

                Assemble the Tacos: Take each warmed tortilla and fill it with a generous portion of the tender shredded birria. Top each taco with fresh chopped cilantro, diced onions, and cheese if desired.
