12 rice paper wrappers

1 cup vermicelli noodles

1 cup shredded green cabbage

1 cup julienned carrots

1 cup fresh bean sprouts

½ cup fresh mint leaves, roughly chopped

½ cup fresh cilantro leaves, roughly chopped

½ cup cooked shrimp, chopped (optional)

1 cup ground pork or chicken, cooked (optional)

Salt and pepper to taste

Vegetable or peanut oil for frying

Prepare the Noodles: Bring a pot of water to a boil and cook the vermicelli noodles according to the package instructions (usually about 3-4 minutes). Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and prevent sticking. Set the noodles aside to cool.

    Prep the Filling: In a large mixing bowl, combine the cooled vermicelli noodles, shredded cabbage, julienned carrots, bean sprouts, mint leaves, cilantro, and optional ingredients like shrimp or ground pork. Season the mixture with a pinch of salt and pepper, then gently toss everything together until the ingredients are evenly incorporated.

      Soften the Rice Paper: Fill a shallow dish with warm water. Take one rice paper wrapper and dip it into the warm water for about 10-15 seconds, or until it becomes soft and pliable. Carefully remove the wrapper from the water and lay it flat on a clean work surface, ensuring it's fully opened.

        Assemble the Rolls: Scoop 2-3 tablespoons of the prepared filling mixture and place it on the lower third of the rice paper wrapper. Fold the sides of the wrapper over the filling, then roll it up tightly away from you, tucking in the edges as you go to create a compact seal. Repeat this process with the remaining rice paper wrappers and filling mixture.

          Fry the Spring Rolls: In a deep skillet or frying pan, pour in enough oil to create a depth of about 1 inch. Heat the oil over medium-high heat until it shimmers. Carefully add a few spring rolls to the hot oil, ensuring not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until they turn golden brown and crispy. Once cooked, use a slotted spoon to transfer the spring rolls to a plate lined with paper towels to drain any excess oil.
