Crispy Sriracha Tofu Lettuce Wraps

14 oz firm tofu, pressed and cubed

1 cup cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

2 tablespoons soy sauce

2 tablespoons Sriracha (adjust according to your spice preference)

1 tablespoon honey or agave syrup

1 tablespoon rice vinegar

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

1 head of butter or romaine lettuce, leaves gently separated

1 carrot, julienned

1 red bell pepper, thinly sliced

Fresh cilantro leaves, for garnish

Sliced green onions, for garnish

Prep the Tofu: Start by pressing the tofu block firmly using a clean kitchen towel or paper towels to eliminate excess moisture. Once pressed, cut the tofu into uniform 1-inch cubes to ensure even cooking.

    Coat the Tofu: Place the tofu cubes in a large mixing bowl. Sprinkle the cornstarch over the tofu and gently toss the cubes, ensuring they are evenly coated. The cornstarch will help create a deliciously crispy exterior when cooked.

      Heat the Oil: In a large skillet or wok, pour in the vegetable oil and heat it over medium-high heat. Once the oil shimmers, carefully add the coated tofu cubes in a single layer, leaving space between them. If necessary, cook in batches to prevent overcrowding.

        Crisp the Tofu: Allow the tofu to cook undisturbed for about 3-4 minutes on one side, then flip to cook the other side for another 3-4 minutes, or until the cubes are golden brown and crispy all over. Once done, transfer the tofu to a plate lined with paper towels to absorb any excess oil.

          Make the Sriracha Sauce: In a small mixing bowl, combine the sesame oil, soy sauce, Sriracha, honey (or agave), rice vinegar, lime juice, garlic powder, ginger powder, and a pinch of salt and pepper. Whisk until all ingredients are smoothly blended and well incorporated.

            Combine Tofu with Sauce: Lower the heat to medium and return the crispy tofu to the skillet. Pour the prepared Sriracha sauce over the tofu and gently toss everything together to coat the tofu cubes thoroughly. Allow to heat through for an additional 2-3 minutes, ensuring the tofu absorbs the flavors.

              Assemble the Wraps: Take a fresh lettuce leaf and spoon a generous portion of the Sriracha tofu mixture into its center. Top with julienned carrots, slices of bell pepper, and garnish with fresh cilantro and sliced green onions based on your preference.
