Crispy Parmesan Zucchini Fries

2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (Panko preferred for an extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

Olive oil spray (or your preferred cooking oil)

Preheat the Oven: Preheat your oven to 425°F (220°C). To prevent sticking, line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Rinse and dry the zucchinis thoroughly. Slice each one in half lengthwise, then cut each half into fry-shaped pieces approximately ¼ inch thick.

      Set Up Breading Stations: Prepare three separate bowls for the breading process:

        - Flour Mixture: In the first bowl, add the all-purpose flour and season with a pinch of salt and pepper.

          - Egg Mixture: Crack the eggs into the second bowl and whisk them until fully combined.

            - Breadcrumb Mixture: In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, along with an additional pinch of salt and pepper.

              Bread the Zucchini Fries: Take each zucchini fry and first dip it into the flour mixture, allowing any excess flour to shake off. Next, coat it in the egg mixture before finally rolling it in the breadcrumb mixture, pressing gently to ensure the coating sticks well. Arrange the coated fries in a single layer on the prepared baking sheet.

                Prepare for Baking: Once all zucchini fries are breaded, lightly spray them with olive oil. This step is optional, but it enhances the crispiness of the final product!

                  Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes. Be sure to flip the fries halfway through the baking time for even crispiness, until they are golden brown and irresistibly crispy.

                    Serve: Once baked, remove the fries from the oven and allow them to cool for a couple of minutes. Serve them hot with your choice of dipping sauce, such as marinara, ranch dressing, or a creamy garlic aioli for an extra flavorful experience.
