Ingredients

1 lb (about 4-5 medium) carrots, peeled and cut into fry shapes

2 tablespoons extra virgin olive oil

1/2 cup finely grated Parmesan cheese

1/2 cup panko breadcrumbs (for an extra crunchy texture)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent the fries from sticking.

Prepare the Carrots: In a large mixing bowl, combine the peeled and cut carrot fries with the olive oil. Toss well to ensure each fry is evenly coated in oil.

Mix the Coating: In a separate bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Mix thoroughly until all ingredients are fully incorporated.

Coat the Carrots: Take each carrot fry one at a time and dip it into the breadcrumb mixture, pressing gently to ensure that the coating adheres well. Place each coated fry in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded for optimal crispiness.

Bake: Slide the baking sheet into the preheated oven and bake for 20-25 minutes. Make sure to flip the fries halfway through baking to achieve even crispiness, looking for a golden brown color.

Serve: Once the fries are perfectly crispy, remove them from the oven and let them cool for a couple of minutes. Garnish with finely chopped parsley and serve immediately alongside your favorite dipping sauce, such as ranch dressing or zesty barbecue sauce.
