Ingredients

1 lb (450g) fresh salmon fillet, skin removed and cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1/2 cup panko breadcrumbs

Oil for frying (vegetable or canola oil), for frying the salmon

1/4 cup honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 green onion, finely chopped (for garnish)

Instructions

Prepare the Salmon: Rinse the bite-sized salmon pieces under cold running water, then gently pat them dry with paper towels to remove excess moisture. Set the prepared salmon aside on a plate.

Make the Coating: In a mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, salt, and black pepper until well combined. In a separate bowl, beat the egg and set it aside. Pour panko breadcrumbs into another shallow dish for easy coating.

Bread the Salmon: Take each piece of salmon and carefully dip it first into the flour mixture, ensuring it's fully coated. Next, dip it into the beaten egg, letting any excess drip off, and finally, coat it with panko breadcrumbs. Press gently to ensure the breadcrumbs adhere well.

Heat the Oil: In a large skillet or frying pan, pour in enough oil to cover the bottom of the pan by about 1/4 inch. Heat the oil over medium-high heat until it shimmers and is hot enough for frying.

Fry the Salmon Bites: Once the oil is hot, carefully place the breaded salmon pieces into the skillet in a single layer, taking care not to overcrowd the pan. Fry the salmon for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spatula to transfer the fried bites to a plate lined with paper towels to drain any excess oil.

Prepare the Honey Garlic Sauce: In a small saucepan set over medium heat, combine the honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Stir continuously and bring the mixture to a gentle simmer. Cook for about 2-3 minutes, or until the sauce has slightly thickened.

Combine the Salmon with the Sauce: Once the sauce is ready, remove it from the heat. Add the crispy salmon bites to the saucepan and gently toss them in the sauce until they are evenly coated.

Garnish and Serve: Transfer the honey garlic salmon bites to a serving dish. For an extra touch, drizzle with additional sauce if desired, and sprinkle with finely chopped green onions for garnish. Serve immediately while they are hot and crispy!

Presentation Tips: Arrange the salmon bites on a stylish platter and serve with lemon wedges or a side of steamed vegetables for a colorful and appealing display.
