1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Sea salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1 cup fresh spinach or arugula

4 whole wheat or spinach tortillas

1/4 cup tahini

2 tablespoons freshly squeezed lemon juice

Fresh cilantro or parsley, chopped, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting the chickpeas.

    Prepare Chickpeas: In a mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, salt, and pepper. Toss everything together until the chickpeas are fully coated with the seasoning.
