2 large boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup Panko breadcrumbs (for extra crispiness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 ripe avocados, sliced

1 cup cherry tomatoes, halved

½ cup lettuce, shredded

4 large flour or spinach tortillas

¼ cup ranch or chipotle sauce (for drizzling)

Olive oil for frying

Marinate the Chicken: In a medium bowl, whisk together the buttermilk, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for a minimum of 1 hour, or overnight for optimal tenderness and flavor.

    Prepare the Coating: Set up two shallow dishes — place the all-purpose flour in one and in the other, combine the Panko breadcrumbs with a pinch of salt and pepper. This will enhance the flavor and crunch of your chicken.

      Coat the Chicken: Once marinated, remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each chicken breast in the flour first, ensuring a good dusting, then dive into the breadcrumb mixture, pressing firmly to adhere a thick, crispy layer.
