Soaking dried chickpeas overnight is a crucial step in creating falafel that is not only delicious but also has the perfect texture. By soaking the chickpeas, you allow them to rehydrate and soften, which makes them easier to blend into a smooth and cohesive mixture. This process also significantly affects the final texture of the falafel; using soaked chickpeas results in a more tender and fluffy interior, while also ensuring that they hold their shape during cooking.

Ingredients

For the Falafel:

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

3 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

1 teaspoon salt

Freshly ground pepper, to taste

2 tablespoons olive oil

Optional: a pinch of cayenne pepper for added heat

For the Wraps:

4 whole wheat wraps or pita breads

1 cup freshly shredded lettuce

1 medium tomato, diced

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup tahini sauce or your favorite dressing

Instructions

Prepare the Chickpeas: After soaking the dried chickpeas overnight, drain and rinse them thoroughly under cold water. Ensure they are as dry as possible, which will help achieve crispiness during air frying.

Make the Falafel Mixture: In a food processor, combine the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse the mixture until it's well combined but still retains a bit of texture—take care not to over-process it into a smooth paste.

Form the Falafel Balls: Using a tablespoon or your hands, scoop out portions of the mixture and shape them into small balls or patties, roughly the size of a golf ball.

Air Fry the Falafel: Preheat your air fryer to 375°F (190°C). Lightly drizzle the falafel balls with olive oil to help them crisp up. Arrange them in the air fryer basket in a single layer (working in batches if necessary) and cook for approximately 12-15 minutes. Flip them halfway through cooking to ensure even browning, until they are golden brown and crispy.

Prepare the Wraps: While the falafel is cooking, lay out the whole wheat wraps or pita breads. On each wrap, layer shredded lettuce, diced tomato, cucumber, and thinly sliced red onion for a fresh crunch.

Assemble the Wraps: Once the falafel is done cooking, position 3-4 falafel balls on top of the vegetable layers in each wrap. Drizzle generously with tahini sauce or your dressing of choice.

Roll and Serve: Tightly roll up each wrap, making sure all fillings are secured inside. For easier handling, slice each wrap in half and serve immediately, accompanied by extra tahini sauce on the side for dipping.

Prep Time, Total Time, Servings: 20 minutes | 30 minutes | 4 wraps

                  - Presentation Tips: Serve your wraps on a wooden platter, garnished with extra chopped herbs and lemon wedges for a vibrant touch.
