Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch piece of ginger, grated

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes (preferably fire-roasted for enhanced flavor)

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon garam masala

1 tablespoon curry powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Juice of 1 lime

Cooked rice or warm naan, for serving

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 5 minutes, or until softened and translucent. Incorporate the minced garlic and grated ginger, and continue cooking for another 1-2 minutes until fragrant and aromatic.

Add Spices: Sprinkle in the ground cumin, ground coriander, turmeric powder, garam masala, and curry powder. Stir the mixture to combine the spices with the sautéed onions and cook for an additional 1-2 minutes. This toasting process enhances the flavors of the spices.

Incorporate Tomatoes: Add the can of diced tomatoes (with their juices) along with the tomato paste to the pot. Stir well to blend all ingredients, allowing the mixture to simmer for about 5 minutes. This step helps the flavors meld together beautifully.

Combine Chickpeas & Coconut Milk: Gently fold in the drained chickpeas and pour in the creamy coconut milk. Stir the mixture until evenly combined, then bring it to a gentle simmer. Allow the curry to cook uncovered for about 15-20 minutes, which will help it thicken and develop rich flavors.

Season & Adjust: After simmering, taste the curry and season it with salt, pepper, and the freshly squeezed lime juice. Adjust the seasoning to your preferences, adding more spice or acidity if desired.

Garnish & Serve: Remove the pot from heat. Garnish the rich curry with fresh cilantro for a burst of color and flavor. Serve the delicious curry hot over a bed of cooked rice or alongside warm naan for a complete meal.
