2 ripe avocados, pitted and peeled

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1/4 cup fresh basil leaves, tightly packed

1/4 cup extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

Salt and freshly ground black pepper to taste

1/4 teaspoon red pepper flakes (omit if you prefer less heat)

Grated Parmesan cheese for serving (optional, but recommended)

Cook the Pasta:

    Begin by bringing a large pot of salted water to a rolling boil. Add the pasta of your choice and cook according to the package directions until it reaches al dente. Before draining, remember to reserve 1/2 cup of the pasta cooking water for later use. After reserving, drain the pasta well and set it aside.

      Prepare the Creamy Avocado Sauce:

        In a high-speed blender or a food processor, combine the ripe avocados, minced garlic, fresh basil leaves, extra virgin olive oil, lemon juice, and a generous pinch of salt and pepper. Blend until the mixture becomes smooth and creamy. If the consistency is too thick for your liking, gradually add a few tablespoons of the reserved pasta water until you achieve the perfect creamy texture.

          Combine Ingredients:

            In a large mixing bowl, combine the drained pasta with the creamy avocado sauce. Gently toss to combine, using additional reserved pasta water as needed to help the sauce cling to the pasta beautifully.
