Creamy Sweet Potato Mac & Cheese

8 oz elbow macaroni

1 medium sweet potato (approximately 1 cup, peeled and cubed)

1 cup milk (whole or 2%)

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp nutmeg

Salt and pepper, to taste

1/2 cup panko breadcrumbs

2 tbsp butter, melted

1/4 cup Parmesan cheese, grated

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rapid boil. Add the elbow macaroni, stirring occasionally, and cook according to package instructions until al dente. Drain the pasta in a colander, then set it aside.

      Prepare the Sweet Potato:

        While the pasta cooks, place the cubed sweet potato in a separate pot and cover with salted water. Bring the water to a boil and cook the sweet potato for 10-15 minutes, or until fork-tender. Drain the sweet potato, then mash it in a bowl until smooth and creamy.

          Make the Cheese Sauce:

            In a medium saucepan over medium heat, combine the milk, mashed sweet potato, garlic powder, onion powder, nutmeg, and season with salt and pepper. Whisk the mixture together until it is well combined and heated through, around 3-5 minutes.

              Add Cheeses:

                Lower the heat to low. Gradually whisk in the shredded sharp cheddar cheese and the softened cream cheese. Continue stirring until the cheeses have melted completely, and the sauce is smooth. Taste and adjust seasoning if necessary.

                  Combine Pasta and Sauce:

                    Pour the cooked elbow macaroni into the cheese sauce. Stir well to ensure that all the pasta is thoroughly coated in the creamy, cheesy mixture.

                      Prepare the Topping:

                        In a small bowl, mix together the panko breadcrumbs, melted butter, and grated Parmesan cheese until the breadcrumbs are evenly coated in butter.

                          Assemble and Bake:

                            Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter. Pour the mac and cheese mixture into the dish, spreading it out evenly. Top generously with the breadcrumb mixture, spreading it to cover the entire surface.

                              Bake:

                                Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the breadcrumb topping is golden brown and crispy.

                                  Garnish and Serve:

                                    Once baked, allow the mac and cheese to cool for a few minutes before serving. If desired, garnish with freshly chopped parsley for an added burst of color and flavor. Serve warm and enjoy!
