2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (about 225g) mushrooms, sliced (cremini or button varieties)

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

1 teaspoon dried Italian herbs (such as oregano, basil, and thyme)

1/4 teaspoon red pepper flakes (adjust according to spice preference)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil over high heat. Once boiling, add the pasta and cook according to the package instructions until it reaches an al dente texture. Before draining, reserve 1 cup of the pasta cooking water, then drain the pasta and set it aside.

    Sauté the Aromatics: Heat 2 tablespoons of olive oil in a large skillet over medium heat. When the oil is shimmering, add the finely chopped onion. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

      Add Garlic and Mushrooms: Incorporate the minced garlic and sliced mushrooms into the skillet with the onions. Continue to cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms are tender and lightly golden brown.

        Incorporate Spinach: Add the roughly chopped spinach to the skillet. Toss and stir for about 2-3 minutes, or until the spinach has wilted and reduced in volume.
